Well, usually, I get paid for this kinda thing, cause it is my job, but for you guys...

From a historical/critical point of view, Canaan's crime was being the eponymous ancestor of the Canaanites, and related peoples, like the Egyptians. They had a reputation for being pervs and various sexual crimes (cf. Gen 34, Gen. 37). So there is some kind of sexual impropriety hinted at involving Canaan, his father, and his grandfather. Remember that in other texts, like Lev. 18, 'uncovering nakedness' is a euphemism for doin' it.
Traditional interpretation doesn't shy away from this. Rashi (an acronym for Rabbi SHlomo Yitzhaki, 1040-1105), says "Some of our sages say he [Ham] castrated him, others say he committed sodomy with him," citing the Talmud, Sanh. 70. Why Canaan, though, and not Ham for the curse? He answers, expanding on Noah's speech 'You have caused me that I should not beget a fourth son, another to serve me; cursed be your fourth son [i.e. Canaan] that he should serve the offspring of those greater men upon whom was placed the burden of serving me from now on [i.e. the other sons]'

So there ya go. Hope that helps! I could explain more, or go on for hours and hours about that.

May I ask what brought it up?

I just fixed the link. I was trolling the Brick Testament and saw the story and remember a sunday school teacher accelerating us past any topics between the names of Noah's sons and the next chapter. This is really the first time that I have seen the story and I gotta tell you, I can't imagine it any way but lego now.

About a week ago, Straight Dope had a couple pages on that. Search for "drunken noah". Jonathan pretty well sums it up, though.
